Certain Chips allow you to change the UID say for example to clone a card access, however this can only be done once ?
Yes.
Some chips do act like this, there one time writable but… this is not the case with any of the implants, there changeable unlimited times

There are actually some MIFARE Classic magic gen2-ish chips which can only have block0 written once (FUID aka 1-write)
There are also MIFARE Classic magic gen2-ish chips which can have block 0 locked with a special command (UFUID)
DT does not sell any implants using these chips
